My favorite pancakes



I love this pancake recipe! It is great with fruit added or my personal favorite... chocolate chips. I like to add some chocolate chips, and that replaces the need for butter and syrup making them easily transportable. I figure it is such a healthy recipe that a little chocolate won't hurt, right? Enjoy!!

HOMEMADE WHOLE WHEAT PANCAKES
6 C wheat flour (can sub. 2-3 of cornmeal and/or quick oats)
4 tbs lemon juice (mixes w/ milk to make buttermilk)
1 C powdered milk 1 tsp baking soda
1 tbs baking powder 3 eggs
3 tbs vegetable oil 1 tbs cinnamon
4-5 C water 4 tbs honey
1 tsp salt 1 tbs vanilla extract
2 tbs maple extract (optional)

Mix until moist. This is a hearty pancake, so smaller pancakes are suggested. Can also add bananas, nuts, and/or berries to pancakes to make them a fun hand held treat for kids. Top with butter and applesauce. (Freeze left-over pancakes and pop into toaster to heat for a quick breakfast.)

Girls vs. Boys


Too funny... Today on the way home from school, Sweet G asks me the following question; "Mom, if there were two blankets on the lawn at our school, and all the boys were on one blanket and all the girls were on another blanket and a kidnapper guy came by, who do you think he would go after first?". My response, "The girls." Her reply, "Yah, I guess it's just part of the curse of being a girl. We are just too cute." Then Teeny Bopper adds in, "Yah. We're like candy." Sweet G says, "Yah. I mean it'd be like choosing between a chocolate bar and a dum dum."

What can I say? That's my girl! LOL :)

There's no business like SNOW business



I'm doing double duty with this post, and calling it my blessing post for the week. I am so thankful for family outings, family outings with good friends, and going to the snow. (and leaving it there!) We had the greatest day Monday on a little snow trip with Supercoolmom and her family. The weather was so nice, about 57 degrees, so we didn't even really need to wear coats! We found the perfect spot to sled with nobody else there to compete with. Dr. Destructo discovered he likes those "nature made snow cones". :) Talk about burning calories! (yippee!) Hauling myself up and down that little hill carrying kids and pulling them on sleds... We were pretty wiped out by the time we were done. I decided I would NOT make a good pioneer in the snow. That is such hard work I can't imagine what they went through, and especially without proper clothing and such. They are my heroes!! After the sledding we ate a picnic lunch and headed home. It was a perfect President's day in my book.

Yummy recipes!

We had a great family dinner tonight, and I thought I'd share the recipes. First, the roast. Just take your roast and put it in a crockpot. Pour a bottle of pepperocinis over top, and cook. Don't add any water or anything, just the entire bottle of peppers including the juice. It was seriously the best roast EVER! And no, it did not taste like pepperocinis. Just very, very tasty and how easy is that! Go on and try it, then let me know what you think.
OK, then Sparkling Potatoes to go with it. First, saute 1 small chopped onion, about 5 cloves of garlic, 1 pkg. chopped bacon and chopped or sliced mushrooms. Then slice a bunch of potatoes(I used 8). Place a layer of potatoes, then a layer of the sauteed mixture, then a layer of potatoes, then a layer of the sauteed stuff. Top with a layer of potatoes and pour a can of Sprite over all. This is actually a dutch oven recipe, but I baked it in a covered pan in the oven at 350 for about 1 1/2 hours. Take out of the oven and top with a bunch of cheddar cheese and let it melt. Soooooooooo yum!!!

10 years ago: I was oh so young and vigorous then! I had 2 kids, a 2 year old and a new baby. I was several pounds lighter, lived in a good sized duplex in our current stake, and was having fun with life. That last part hasn't changed, even if everything else has!
5 things on my list of things to do today:Host Valentine craft workshop (very fun!), take kids to their friend's baptism, attend the World Wide Leadership Meeting (which was the BEST meeting I have been to in a while. Man, that was an awesome broadcast!!!!), um, well, did I do anything else today? Let me look back... I took Little Miss to DQ for a Dilly bar, had a very cranky baby with molars coming in--that has got to count for something!, and fixed 2 bikes (pumped up and fixed chain with DH) so kids could ride. Is that five things??
Things I would do if I was suddenly a billionaire:Too many to list! But it would be a lot of fun! I would like to try this one...
3 of my bad habits:What kind of question is this? OK, let's pick only 3...I eat too much chocolate, I enjoy eating too much chocolate, and I look like I eat too much chocolate. :)

Things most people don't know about me:Well, I am actually a fairly reserved, introverted person. I keep a lot of thoughts and feelings to myself. There are times when I do express myself, however. I love girl friends for that purpose! I am a homebody, but am fairly well traveled. I have been to the Bahamas twice, Hawaii, England, & Mexico. I won my school spelling bee in six grade. (I'll be your spell checker, Lorie. :)

My blessing this week


My blessing this week is...my Blondie. She has the sweetest, biggest smile! She loves to laugh (which sometimes drives her sisters crazy), LOVES to play with her little brother and help out with him, and loves to play girlie stuff (especially Barbies and dress-up) with her sisters. She has blossomed throughout her 7 years of life into such a sweetheart. She asks tooooooooons of questions, thoughtful questions mind you, and it is always interesting to hear what comes out of her mouth. Of course, she is always honest. Very honest. If you want an honest answer to a question, ask Blondie. If not, don't ask her because she'll tell ya. She is starting to be a little more diplomatic in her responses (finally). :)
She is my only blue-eyed companion in our family and pretty much an exact copy of me in a smaller form. She loves to scrapbook and draw (she's way better at drawing than I am!), eat pizza and ice cream, and is fun to be around. I love ya, Blondie!!

GUESS what I found?


Yes, I do have a desk afterall! I was doing some cleaning to prepare for a baby shower, and realized that I could NOT let anyone see my desk in the condition it was in. It took a while (I should have taken a before picture) but was soooo worth the work. Now I want to sit down and make something... It's funny how clean desks call out to us "creative types" to come make a mess! :) As long as I can hold out until after the baby shower...
